Cake is a type of food that is usually sweet, and often baked. The basic ingredients for a cake usually includes flour, fats, sugar, liquid, some form of leavening agent and a binding agent, most commonly egg. There are countless types of cakes. Some are bread-like, some are rich and moist while some can be light and spongy.

A Rich Cake has a heavy and moist texture. There are various methods to produce a rich cake. There is the Creaming method, the Rubbed in method and the Melting method. We would be focusing on the creaming method, which is used when the proportion of fat to flour is half or more by weight. The high amount of fats used in Rich Cakes contributes to it's texture.
